Ingredients

  • (4 lbs) Grass-fed Chuck Roast
  • (1 teaspoon) Kosher salt
  • (1 tablespoon) Steak seasoning mix
  • (1 1/2 teaspoon) Onion powder
  • (2 teaspoons) Garlic powder
  • (1/2 teaspoon) Black pepper
  • (1 tablespoon) Worcestershire sauce
  • (2 tablespoons) Minced onion
  • (2 1/2 cups) Beef stock
  • French bread
  • Provolone cheese

Directions

  1. Prepare the Roast – Place the beef roast in the bottom of your Instant Pot. Sprinkle with seasonings and minced onion.

  2. Add Liquid – Pour in the beef stock, secure the lid, and set the valve to Sealing.

  3. Pressure Cook – Set to cook on high pressure for 60 minutes. Let the pressure naturally release for 20 minutes, then quick release the rest.

  4. Shred or Slice – Remove the beef and shred it with two forks or slice thinly. Save the flavorful cooking liquid — this becomes your au jus dipping sauce.

  5. Assemble – Load the beef onto baguettes or French rolls, top with provolone cheese, and broil until the cheese melts and bread crisps up.

Serve with the warm au jus for dipping.
