Ingredients
- (4 lbs) Grass-fed Chuck Roast
- (1 teaspoon) Kosher salt
- (1 tablespoon) Steak seasoning mix
- (1 1/2 teaspoon) Onion powder
- (2 teaspoons) Garlic powder
- (1/2 teaspoon) Black pepper
- (1 tablespoon) Worcestershire sauce
- (2 tablespoons) Minced onion
- (2 1/2 cups) Beef stock
- French bread
- Provolone cheese
Directions
- Prepare the Roast – Place the beef roast in the bottom of your Instant Pot. Sprinkle with seasonings and minced onion.

Add Liquid – Pour in the beef stock, secure the lid, and set the valve to Sealing.

Pressure Cook – Set to cook on high pressure for 60 minutes. Let the pressure naturally release for 20 minutes, then quick release the rest.

Shred or Slice – Remove the beef and shred it with two forks or slice thinly. Save the flavorful cooking liquid — this becomes your au jus dipping sauce.

Assemble – Load the beef onto baguettes or French rolls, top with provolone cheese, and broil until the cheese melts and bread crisps up.
Serve with the warm au jus for dipping.
