Marinated Beef Kabob
This recipe is for tender, flavorful beef skewers loaded with colorful vegetables. Cubes of marinated beef are threaded onto skewers alongside bell peppers, red onion, and mushrooms, creating a vibrant mix of textures and colors. The meat soaks up a savory marinade that keeps it juicy and deeply seasoned, while a quick grill or sear caramelizes the edges for a smoky, slightly charred finish. The result is a hearty, crowd-pleasing dish that’s perfect for backyard barbecues or easy weeknight meals.

Ingredients

  • (1.5 pounds) Grass-fed Tri Tip Steak
  • (3) Bell peppers (red, yellow, and green)
  • (16) Small mushrooms, cut 1.3 inch wide
  • (1) Large red onion
  • (1 teaspoon) Garlic, minced
  • (1 teaspoon) Onion powder (or sub with garlic powder)
  • (2 1/2 tablespoons) Soy sauce
  • (2 tablespoons) Worcestershire sauce
  • (2 tablespoons) Balsamic vinegar
  • (1 tablespoon) Vegetable oil (or other neutral flavoured oil)
  • (1/4 teaspoon) Black pepper
  • (16) Flat metal skewers, 10-12 inches long
  • (For drizzling and cooking) Olive oil
  • (For garnish) Finely chopped parsley

Directions

  • Cut beef into roughly 1.3 inch cubes.
  • Combine all marinade ingredients in a bowl, add the beef, and let it marinate for at least 20 minutes or up to 24 hours.
  • Slice bell peppers and onions into similar 1.3 inch pieces.
  • Thread the beef, vegetables, and mushrooms onto skewers, alternating so that each piece of beef is separated by two pieces of vegetables. Leave a little space between ingredients to ensure even cooking.
  • Lightly brush the skewers with the reserved marinade, including the vegetables, and drizzle with olive oil.
  • Preheat a barbecue grill or large skillet over high heat. Add a tablespoon of oil, and when it’s hot and smoking, cook the kebabs in batches for about 2 minutes per side (around 8 minutes total), brushing with marinade as they cook until slightly charred.
  • Transfer cooked skewers to a plate, cover loosely with foil, and let them rest for 3 minutes before serving. Garnish with parsley if desired, and serve.
