What Cuts You’ll Actually Receive

One of the most common questions first-time bulk beef buyers ask is: what exactly do I get? It’s a fair question. Committing to a bulk beef share is a real investment, and you deserve to know what you’re working with before you sign on.

Circle J Meat offers four share sizes: Whole, Half, Quarter, and Eighth. Each one delivers a genuine cross-section of the animal, from everyday ground beef to special-occasion steaks, slow-cooker roasts, short ribs, and brisket. The size you choose determines how much of each cut you receive — not which cuts you get access to. This chapter breaks down exactly what’s in each share, gives you realistic quantity estimates, and explains what each cut is best used for.

The Big Picture: What Each Share Yields

Here is how the four Circle J Meat share sizes compare at a glance. All beef is grass-fed, dry-aged a minimum of 21 days, and individually vacuum-sealed and labeled. Free shipping is included with every order.

GOOD TO KNOW

Some cuts may be substituted with a cut of similar value depending on the animal. Ground beef packages are 90% lean and come in 1 lb. packages. Cuts marked as “limited” (such as brisket in the Quarter share) are not guaranteed.

Ground Beef — Your Everyday Workhorse

Ground beef makes up the largest single portion of every share. For most families, that’s a feature, not a bug. It’s the most versatile cut in the box, and having a generous supply on hand means you’re covered for months of weeknight dinners without a single grocery run.

All Circle J ground beef is 90% lean and packaged in 1 lb. vacuum-sealed packages. Because it comes from your specific animal, the quality and consistency is something grocery store ground beef simply can’t match.

Common uses: burgers, tacos, pasta sauces, meatballs, meatloaf, chili, casseroles, and just about anything else that calls for ground beef.

FIRST-TIMER TIP

If you’re worried about having too much ground beef, don’t be. Most families burn through it faster than any other cut. It’s the cut that makes bulk beef worth it on a pure convenience and cost basis alone.

Premium Steaks — The Cuts People Get Excited About

Every Circle J share includes steaks from the premier trio: Ribeye, New York Strip, and Filet Mignon. These are the cuts people think of when they imagine a great steakhouse dinner, and you’re getting them at bulk pricing.

In addition, each share (except the Eighth) includes Sirloin Steaks — a large, flavorful cut averaging 12–14 oz., big enough for two people.

Roasts — The Slow Cooker’s Best Friend

Roasts come from the harder-working muscles of the animal, which means they’re tougher than steaks but reward low, slow cooking with deep, rich flavor and melt-apart tenderness. If you own a slow cooker, Dutch oven, or Instant Pot, roasts will become some of your most-used cuts.

Depending on your share size, you’ll receive roasts from the chuck, rump, round, tri-tip, Picanha, or shoulder — a diverse selection that covers pot roast, shredded beef, sliced roast beef, and everything in between.

Fajita Meat, Skirt Steak, Flat Iron & Flank — The Versatile Middle Cuts

This category covers some of the most flavorful and versatile cuts in the whole animal. Depending on availability, your share will include some combination of fajita meat, skirt steak, flat iron steak, flank steak, and sirloin bavette. These cuts are ideal for quick, high-heat cooking and are the backbone of fajitas, stir-fry, carne asada, and marinated grilled dishes.

Stew Meat — The Underrated Essential

Stew meat is cut from the chuck, giving it the deep, beefy flavor and marbling that transforms into something extraordinary after a long braise. It’s the foundation of beef stew, chili, Instant Pot dishes, and slow-cooker favorites.

Beef Short Ribs — Low, Slow, and Worth Every Minute

Short ribs are one of the most impressive cuts you’ll find in your share. They’re rich, deeply marbled, and become extraordinary when cooked with patience — whether braised low and slow in a Dutch oven, cooked Korean BBQ-style (galbi), or smoked.

Brisket — The Crown Jewel of Low-and-Slow

Brisket is one of the most celebrated cuts in American barbecue — and Circle J Meat shares include it where available. It’s a large, heavily worked muscle from the chest of the animal that becomes extraordinary after many hours of low heat. If you don’t own a smoker, brisket is equally incredible braised in a Dutch oven or slow cooker.

PRO TIP

A whole brisket includes both the flat and the point. The flat is leaner and ideal for sliced brisket. The point is richer and perfect for burnt ends or a hearty braise. If you want both, keep it whole. If you want to cook them differently or your smoker is smaller, ask your butcher to separate them.

Which Share Is Right for You?

Here is a practical breakdown of what each share size means in real life:

Eighth Beef — 45 lbs. | ~1.5 cu. ft. | $663.75

The ideal entry point for first-time bulk beef buyers or small households. You’ll receive a solid selection of premium steaks, a couple of roasts, fajita meat, stew meat, short ribs, and 20–30 lbs. of ground beef. It fits in a standard home freezer with room to spare.

Quarter Beef — 90 lbs. | ~4–5 cu. ft. | $1,282.50

A great fit for couples or small families who cook regularly and want genuine variety. You’ll get 12–14 premium steaks, 4 sirloin steaks, 2–3 roasts, short ribs, stew meat, fajita cuts, and 40–50 lbs. of ground beef. Brisket is included when available. Fits in most standard freezers.

Half Beef — 180 lbs. | ~6 cu. ft. | $2,430

Where bulk buying starts to transform how families shop and cook. You’ll receive 21–24 premium steaks, 4–8 sirloin steaks, 4–6 roasts, 14–16 lbs. of short ribs, a full brisket, stew meat, fajita cuts, and 80–100 lbs. of ground beef. Most households find this supply lasts six months to a year.

Whole Beef — 360 lbs. | ~12 cu. ft. | $4,680

Maximum value and the broadest variety available. Two briskets, 40–45 premium steaks, 12–16 sirloin steaks, up to 16 roasts, 24–28 lbs. of short ribs, 12–15 lbs. of fajita cuts, and 160–200 lbs. of ground beef. Ideal for large families or two households splitting the order. Requires a dedicated chest freezer.

HOW IT WORKS

Every share requires a deposit to reserve your order. Circle J then selects the healthiest steer in the herd, has it processed by expert butchers, and dry-ages it for a minimum of 21 days to maximize flavor and tenderness. Once your beef is ready, you pay the remaining balance and it ships to your door fully frozen — free of charge.

You’re More Prepared Than You Think

Most people are surprised by how much variety comes in a bulk beef share — and how quickly they work through it. Ground beef disappears fastest, roasts become a slow-cooker staple, and steaks get reserved for the moments that deserve a little celebration. The cuts that intimidate beginners at first often become favorites once you’ve cooked them once.

The key is going in with a plan. Know what you’re receiving, and organize your freezer so you can actually find everything. Speaking of which — let’s talk about the freezer.

Why Houston Families Are Ditching the Grocery Store for Bulk Beef

Grocery bills in Houston keep climbing, and beef is one of the biggest culprits. That's why more local families are skipping the meat aisle altogether and buying straight from Texas ranchers instead, stocking a freezer with a quarter, half, or whole cow at a fraction of the per-pound cost. It's a shift built on real savings, better transparency about where the meat comes from, and support for the region's ranching community. Here's why the trend is picking up speed across Houston, and what it actually takes to make the switch.
