Ingredients

  • (1 lb) Grass-fed Sirloin Steak
  • (14 ounces) Beef broth
  • (3) Carrots, diced
  • (3) Potatoes, cubed
  • (1 cup) Frozen peas, thawed
  • (3 tablespoons) Cornstarch
  • (1/3 cup) Water
  • (2) 9 in. refrigerated pie crusts
  • (To taste) Salt and pepper

Directions

  1. Cook the Beef: In a large saucepan over medium heat, brown the cubed sirloin on all sides. Add enough water to nearly cover the meat. Bring to a boil, then reduce the heat and simmer for 2–3 hours, until the beef is tender and falls apart easily. Transfer the meat to a mixing bowl, shred lightly, and season with salt and pepper.
  2. Cook the Vegetables: In a separate saucepan, add the beef broth, carrots, and potatoes. Simmer over medium heat for 15–20 minutes until almost tender.
  3. Combine Ingredients: Preheat the oven to 350°F (175°C). Transfer the cooked vegetables to the bowl with the beef, leaving the broth in the saucepan. Stir in the peas to combine.
  4. Make the Gravy: In a small bowl, mix the cornstarch with â…“ cup water until smooth. Stir the mixture into the saucepan with the remaining beef broth. Bring to a simmer and cook for about 5 minutes, stirring until thickened.
  5. Assemble the Pie: Line a 9-inch pie dish with one of the crusts. Spoon the beef and vegetable mixture into the crust, then pour the gravy evenly over the top. Cover with the second pie crust, sealing the edges and cutting a few small slits on top to vent steam.
  6. Bake and Serve: Bake for about 25 minutes, or until the crust is golden brown. Let cool for 5 minutes before slicing. Serve warm and enjoy!
