Ingredients

  • (2 lbs) Grass-fed Chuck Roast
  • (1/2 teaspoon) Salt
  • (1/2 teaspoon) Ground black pepper
  • (4 ounces) Butter
  • (4) Green onions, sliced (white parts only)
  • (4 tablespoons) All-purpose flour
  • (1 can) Condensed beef broth
  • (1 teaspoon) Mustard
  • (6 ounces) Sliced mushrooms, drained
  • (1/3 cup) Sour cream
  • (1/3 cup) White wine

Directions

  • Prepare the Beef: Trim any excess fat and gristle from the chuck roast, then cut it into uniform strips. Season with salt and pepper.
  • Brown the Beef: Melt the butter in a large skillet over medium heat. Add the beef and brown it quickly, stirring occasionally.
  • Cook the Onions: Push the beef to one side of the skillet and add the onions. Sauté for 3–5 minutes until soft and fragrant. Push the onions over to join the beef.
  • Make the Sauce: On the open side of the pan, stir the flour into the pan drippings. Gradually whisk in the beef broth and bring to a gentle boil. Reduce heat and mix in the mustard.
  • Simmer Until Tender: Cover and cook on low for about 1 hour, until the beef becomes fork-tender and the sauce thickens.
  • Finish the Dish:– Five minutes before serving, stir in the mushrooms, sour cream, and white wine. Heat through, but don’t let it boil. Season to taste with salt and pepper.

Serve over hot cooked noodles or creamy mashed potatoes for a comforting, flavorful meal.
